Instead of just downloading best racers and practicing, just try first on all your best tracks. I did this and i got most on first go and got the torpedo bike today. When you want to complete all 32 ghosts then you sohuld download and practice.

i have gotten at least 12 gost without any trick i just races them and won and got more that 2 sec on the win but it wasn't that hard
o and i practiced N64 bowser for a wile yes he is easy to beat but i wanted to beat him by at least 18 sec
