Well, that's a way of improving. The handling in MKDD was harder, but that only made you improve faster. Once you get the hang of it, you can make your kart go wherever you want it to go.
Take a look at professional players. On the narrow, bendy stretch of track where people constantly fall off, they can MT consistently.
Handling is one of the major differences between racing games. Don't expect every car/kart to feel the same. If that was the case, all the professional players in one game would dominate all the other games and no-one else would be given a chance. Handling is different because it's a different game.
Another reason may be that the GC controller's analog stick gives the players too much advantage. If that is the case, Nintendo would have nerfed the handling to that of a poor quality compared to the controls of MKDS.
In fact, the handling difference between MKDD and MKDS may entirely be an illusion and the unfamiliarity of the analog stick compared to the directional pad may be causing a sort of miniscule "placebo effect" where your brain, thinking that it is unfamiliar, decides that it is unfamiliar and therefore leads you to your conclusion.
